A cotton yarn works well for Ami as it gives good stitch definition and creates a firm structure so body parts hold their shape well. Catona is a relatively thick 4 ply (US: Sport) - you can substitute a DK Cotton (US: DK/Light Worsted) with a similar amount of meters per 50g.
These little characters are great for using up odds and ends of yarn. As a rough guide, making the combined body and head in a single colour would use approximately 15g of Catona 4 ply.

Using the photographs as a guide, pin the pieces together first, checking from all angles to make sure you’re happy with the positioning, then use the long yarn tails or a length of yarn with a yarn needle to stitch the pieces together.
Sew the Nose in place in line with Rnd 19/20 of the Body/Head.
Sew the Beard in place centred under the Nose, attaching it just along the top edge of the Beard.
Sew the Cuffs onto the Arms where the colours change.
Sew the Arms either side of the Body, attaching them to Rnd 15/16 of the Body/Head.
Sew the Eyes in place just above the Nose, spaced about 3 stitches apart.
Sew the Hat in place angled so that the front edge sits just above the eyes and the back of the Hat sits in line with the neck.
Sew the Pom Pom onto the top of the Hat and the Leaves and Berry onto the Brim.

Sew the Jumper Bottom Ribbing in place in line with Rnd 10 of the Body.

Sew the Nose over the end of the Muzzle.
Sew the Eyes in place just above the top edge of the Muzzle approximately 3 stitches apart.
Sew the Arms in place either side of the Body roughly in line with Rnd 14 of the Body.
Sew the Antlers to the top of the Head, leaving a small gap between them.
Pinch the edge of each Ear to create a fold and secure with a couple of stitches, sew the Ears in place either side of the Antlers.
Using the photographs as a guide, pin the pieces together first, checking from all angles to make sure you’re happy with the positioning, then use the long yarn tails or a length of yarn with a yarn needle to stitch the pieces together.
Sew the folded Collar in place around the neck.
Sew the Jumper Bottom Ribbing in place in line with Rnd 10 of the Body.
Stuff the Muzzle and sew in place on the Head so that the bottom of it sits just above the top edge of the Collar.
Sew the Nose over the end of the Muzzle.
Sew the Eyes in place just above the top edge of the Muzzle approximately 3 stitches apart.
